So and now I start manufacturing. As with any new yeast water, you need 500 ml of still water for this. I took tap water here. If you have chlorine, it is best to use still mineral water from the supermarket or spring water. Now you need a teaspoon of sugar. I like to use sugar beet syrup. Honey, granulated sugar or syrup are of course also possible here. What doesn't work is birch sugar, which is also called xylitol. Now I add about 2 tablespoons of Anstellgut. For me these are dry bread and bread rolls cut into small pieces. But it also works with whole or half pieces of bread.
I mix everything together and stir it in the morning and evening so that no mold can form. Of course, I rinsed the container that I use thoroughly with hot water beforehand.
I'll leave my future yeast water at room temperature until it smells alcoholic. It is also really very pleasant with bread yeast water.
To use it, however, I puree my yeast water beforehand so that the bread can still be used in the pastry. Here I tested it with my favorite recipe, the hamburger buns, and although it was quite a new yeast water that I freshened up, it worked out great. So it was ready for use with me.
